An SOP, or standard operating procedure, is a written, step-by-step description of how a task gets done in your business. It's the difference between "ask the owner how to do it" and "read the three steps and do it the same way every time." Small businesses usually only need a handful of these to cover the tasks that come up most often.
Usually because the important knowledge, how to quote a job, how to handle a specific kind of customer request, what order steps happen in, only exists in your head. If nobody else has access to that knowledge, every decision routes back through you, even ones your team could easily make on their own.
